Herman was the son of Wilhelm Gustav Polack & Maria Elizabeth Hasz, and husband of Wilhelmine Stohs. He began his teaching career in a public school in East St. Louis, Illinois, before teaching in Lutheran schools in St. Louis, Missouri; Wausau, Wisconsin; and Cleveland, Ohio. He was an also an organist, composer and choir director, and served on the music committee for The Evangelical Lutheran Hymnbook of 1912.
